I've always had trouble mixing collagen in my coffee just because it clumps so much, I liked the flavor when it is mixed well. I suggest lightly sprinkling the powder into your coffee while also stirring.

This is definitely a great substitute for creamer so you can get in your collagen protein at the same time. Mixes well into coffee and has a mild vanilla flavor. Only drawback for me is it's 140 cal per serving.
