Many hot sauce companies use pirates or flaming skulls as mascots—but when it came time for founders Erin Link and George Minton to name their Texas-based condiment brand, they wanted something different. It took some time to come up with just the right idea, but eventually Minton read an article about how all birds are immune to capsaicin, the chemical that makes chili peppers spicy. The article mentioned a breed of yellow birds in Thailand that eat peppers to flavor their skin as a defense mechanism to deter predators. After that, Yellowbird Sauce was born.
