History of tahini
Tahini is also known as sesame butter and is the product of ground sesame seeds that has been used in Lebanese, Armenian, Greek, Cypriot, Indian, Iranian, Israeli, Palestinian, Turkish, Iraqi, Levantine, North African, and Bulgarian cuisines for thousands of years. Tahini was first mentioned as an ingredient of hummus, in a recipe from a 13th-century Arab cookbook.
