It keeps for a week in the fridge, and you can spread it on muffins or toast, stir it into oatmeal, or even warm it up and drizzle a spoonful over ice cream! Manuka Honey Apple Butter
Yield: 2 cups
Active Time: 10 minutes
Total Time: 3 hours and 10 minutes
Add all ingredients except honey to a large stock pot and warm over medium heat. Cover and cook for 2 hours, stirring occasionally, or until apples have broken down. Add manuka honey, then use an immersion blender to purée until smooth. Let cool completely (the apple butter will thicken as it cools), then refrigerate in an airtight container for up to 1 week.
