Do you take your coffee with grass-fed butter and medium-chain triglycerides (MCTs)? Then this recipe is for you! It combines the same ingredients that proponents claim may help fire up the metabolism and kick the brain into high gear. But, we mixed in gelatin (a good source of collagen) to turn the popular drink into rich gummy squares. They’re easy to bring with you so you can get your coffee fix whenever you need a quick boost!
Yield: 50 (1-inch) cubes
Active Time: 15 minutes
Total Time: 3 hours and 15 minutes
5 tablespoons Now Foods Pure MCT Oil
5 tablespoons grass-fed butter
â…” cup grass-fed gelatin
5 cups hot brewed coffee
2 tablespoons honey (additional if you prefer them sweeter)
Pour all ingredients into a blender and blend until fully incorporated and frothy. Pour into a 9×13-inch baking pan; cover. Refrigerate until set, about 3 hours. Cut into 1-inch cubes and store in airtight container in the refrigerator for up to 5 days.
