But these aren’t just any pancakes—they’re healthified with gluten-free coconut flour. Whip up a batch on a Sunday, freeze them, you’ll be set for breakfast for the rest of the week. Every morning, just defrost and reheat, and then load those babies up with almond butter, jam, and honey, and sandwich two cakes together. Done and done. Try to resist taking a bite before you bag it up for the little ones.
