Eat it every morning!
I love this mix! I add in flax meal, chia seeds, coconut flakes, agave and frozen berries. You can also easily substitute the egg with an egg substitute, butter for oil and milk for any nut/soy milk. I bake it up, cut into squares and freeze in individual portions to take out for breakfast every morning. Super tasty, super easy to make and the price point on Thrive is awesome.
Average taste. Nothing to write home about but didn't upset my stomach like regular cornbread usually does. Said to use a 9x9 pan, I used an 11x9 and had to cook longer than the suggested 25 mins as the middle was under-cooked even though my toothpick came out clean. Will probably use a 13x9 pan next time. Would buy again.

Gluten Free Corn Bread Mix

I like it better than pancake mix - just add some oil, sugar, egg, milk or sour cream (I don't measure) till you get the right consistency and cook like pancakes. A tradition at my house with homemade cranberry topping. Yum!
This cornbread mix makes yummy muffins! You would not even believe they are gluten free. My husband likes them and he's not a big cornbread fan. It bakes up nice and dense, but delish with butter!
Very good GF alternative
Thrive price is excellent so I like to keep one bag in my pantry for time I want to make chili for the family. It would also be good for the holidays when cornbread stuffing is on the menu.
I only wish you could easily make half of this recipe. For two people too much. I froze some of it and not sure how that will taste.
With some measuring, I can make half, but not as convenient.
Cornbread like mom's
After trying another brand of gluten-free cornbread that was bland and disappointing, I was on a hunt for cornbread that tastes like cornbread! Bob's Red Mill did an excellent job at a great price. This perhaps makes too much cornbread for my little family, so I may try to split it into two batches in the future or make cornbread muffins and freeze the leftovers. Will definitely order again.
Gluten-free, moist and tasty. Works as side dish, in casserole bakes, as breakfast food. Loved it!
This cornbread was surprisingly delicious, and I say that because I had to make additional substitutions - I used applesauce instead of egg, and a non-dairy milk. The texture was right on. I used it to make a cornbread dressing for Thanksgiving, and it was awesome.
This is easy to make and tastes good too. I never put sugar in my regular cornbread but this isn't super sweet. My husband is gluten free so I also am virtually gluten free and I like this mix too. Thank you for making it readily available.
