With crisp, golden edges and a chewy middle, these spiced apple oat cookies go wonderfully with a mug of hot tea. Whip up a batch the next time you crave a comforting mid-afternoon treat!
Yield: 24 cookies
Active Time: 5 minutes
Total Time: 30 minutes
8 tablespoons ghee or coconut oil
6 tablespoons maple syrup
4 tablespoons buckwheat flour
1 1/3 cups gluten-free rolled oats
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1/2 teaspoon vanilla extract
1 teaspoon Maldon sea salt
1/2 cup chopped dried apples
Preheat the oven to 350 degrees and line two baking sheets with parchment paper.
Measure all ingredients together into a large mixing bowl and stir to thoroughly combine.
Spoon 24 pieces of dough onto prepared baking sheets and form into circles. The batter is thin and will spread. Bake for 15 to 18 minutes, or until the cookies turn a deep golden brown around the edges. Let cool on the sheet. When warm, the cookies will still be soft, but they will crisp as they cool.
