2 pasture-raised eggs
2 tablespoons lemon juice
Zest of 1 lemon
5-6 fresh figs, sliced

Preheat the oven to 350F with a rack placed in the middle. Combine the almond flour, baking soda, and sea salt in a large mixing bowl. Gradually add in the maple syrup, olive oil, eggs, and lemon juice and zest. Whisk until the dry and wet ingredients have mixed completely.
Grease a 9-inch cake pan with a bit of olive oil. Pour the batter into the cake pan and spread it around evenly. Top with fig slices and thyme leaves.
Bake for 25 minutes on the middle rack, which will give it just the right amount of golden brown. After 25 minutes, if you stick a knife through the middle of the cake, it should come out clean. Allow to cool before slicing and serving. Cake is done!
