Ingredients
4 slices bread of choice (try Base Culture Keto Bread or Food for Life Ezekiel 4:9 Sprouted Grain Bread)
Handful of arugula or greens of choice
Small handful of fresh herbs (try parsley and/or basil)
2-3 tablespoons prepared basil almond pesto
Olive oil and balsamic vinegar, to serve
2 slices (â…” of whole) prepared frittata
Instructions
Toast the bread. Top both slices with a layer of pesto, add the arugula and herbs, and dress with a drizzle of olive oil and balsamic vinegar.
Top each piece of toast with a slice of frittata and the second slice of toast.
