Let’s take a moment of silence for all the half-drunk bottles of wine that have soured after sitting out uncorked all night. Nothing’s more tragic (and wasteful) than pouring that perfect pinot noir down the drain the morning after.
Don’t mourn the demise of that bottle you open but can’t quite finish. Before you toss it, reconsider the dregs left in there. Both red or white wine make great additions to a variety of sauces and marinades, so save it for later.
Our favorite way to do this? Pour leftover vino into an ice-cube tray and freeze it. When you’re ready to cook, just pop out a wine cube and add it to the pan. Wasted wine never tasted so good.
