Better Than Takeout: Tofu & Spinach with Stir Fried Rice

Our Better Than Takeout recipe series is meant to inspire cooking at home—rather than falling victim to the expensive, unhealthy, and often time-consuming process of ordering in from a food delivery app. As an alternative, we’ve assembled a few recipes that we think are more nutritious (and certainly more affordable!) than takeout, and they take just a few minutes to prep and cook. From savory stir-fries to protein-packed meatballs and warming grain bowls loaded with veggies, these are the meals we hope you’ll return to again and again on busy weeknights.
This tofu stir fry offers all of our favorite easy dinner components in one bowl: a short ingredient list, less-than-30-minute cook time, and complex flavor that’s not complex to create. If you have one, the air fryer is your best friend here; if not, a conventional oven works just fine. The end result is a meat-free, umami stir fry with fresh, nutritious ingredients—and yep, we think it’s better than takeout!
Tofu & Spinach with Stir Fried Rice Recipe

Ingredients
16 ounces Wildwood Super Firm Tofu
½ cup Kevin’s Honey Garlic Sauce
1 package Grain Trust Hibachi Fried Rice
3 cups spinach
1 teaspoon Thrive Market Organic Extra Virgin Olive Oil
Scallions and sesame seeds, for serving
Instructions
Preheat air fryer to 400º F (or oven to 425º F).
Drain the tofu and pat dry. Cut into large 1 ½-inch cubes.
Add the tofu cubes and honey garlic sauce to a bowl. Stir to coat (if you have time, it’s nice to let it marinate for a while).
Arrange the tofu on an air fryer tray. Air fry or bake for 15 to 17 minutes, until browned.
Meanwhile, prepare the fried rice according to package instructions.
Heat olive oil in a skillet over medium. Add spinach and season with salt and pepper. Cook 2-3 minutes, until wilted.
Add the fried rice to a bowl and top with spinach and tofu. Serve with scallions and sesame seeds.
