Bake them in a mini muffin pan for a bite-sized breakfast that’s ready in 15 minutes–no pancake flipping required! Mini Pancake Bites

Total Time: 20 minutes

Ingredients:

1 ½ cups prepared pancake mix (we love Birch Benders, Kodiak Cakes, and Simple Mills)
⅓ cup blueberries
⅓ cup raspberries
2 tbsp Enjoy Life Semi-Sweet Chocolate Mini Chips
Thrive Market Organic Powdered Sugar, for serving
Thrive Market Organic Dark Maple Syrup, for serving

Instructions:

Prepare 1 ½ cups of your favorite pancake mix and preheat the oven to 400ºF.

Lightly grease a mini cupcake pan with cooking spray.

Scoop 1 tbsp of batter into each cup. Sprinkle on the blueberries, raspberries, and mini chocolate chips across different rows.

Bake for 12 to 14 minutes, until domed and lightly browned.

Sprinkle with powdered sugar and serve with maple syrup!
