Healthy Reset Meal Plan: Indian Spiced Chicken Grain Bowl

Ingredients: 

2 ½ cups rice or grain*
Yogurt-marinated chicken*
1 cup zucchini*
1 Persian cucumber, thinly sliced
½ avocado
2 tablespoons Thrive Market Organic Raw Cashews, chopped (or nut of choice)
Small handful of salad greens
1 cup mint, parsley, and cilantro herb mix, roughly chopped
3 tablespoons Greek yogurt (or plain yogurt of choice)
1 lime
1 tablespoon toasted sesame oil
3 tablespoons Thrive Market Organic Extra Virgin Olive Oil

Instructions:

Reheat the yogurt-marinated chicken, zucchini, and grains, in either the microwave or the oven.

While ingredients are reheating, make the dressing. Add the zest and juice of 1 lime to a small mixing bowl with the sesame oil and olive oil, whisking well to combine. 

Split the rice or grain into two mixing bowls. Top each evenly with the herb mix, salad greens, and nuts, then add the chicken, zucchini, sliced cucumber, and avocado. 

Add a dollop of yogurt to each. Drizzle the dressing evenly over each bowl. Season with salt and pepper to taste.
