Pizza Mac and Cheese

Yields: 2 servings
Active Time: 15 minutes

Ingredients

1 (6-ounce) box Annie’s Gluten-Free Rice Pasta & Cheddar Macaroni and Cheese
3 tablespoons milk
2 tablespoons butter
1 cheese packet (included in box)
½ cup mini fresh mozzarella balls
3 ounces pepperoni, thinly sliced

Instructions

Cook pasta according to package instructions. Drain pasta, then add it back into the saucepan along with milk, butter, cheese packet, mozzarella, and pepperoni; stir.


Primavera Mac and Cheese

Yields: 2 servings
Active Time: 15 minutes

Ingredients

1 (6-ounce) box Annie’s Gluten-Free Rice Pasta & Cheddar Macaroni and Cheese
1 tablespoon extra virgin olive oil
Half zucchini, cubed
1 small carrot, cut into 2-inch batons
¼ red bell pepper, cut into ¼-inch strips
3 tablespoons milk
2 tablespoons butter
1 cheese packet (included in box)

Instructions

Cook pasta according to package instructions; drain. While the pasta cooks, warm oil in a skillet over medium heat. Add zucchini, carrots, and bell pepper. Sauté for 3 to 5 minutes, or until tender. Off heat, add drained pasta to skillet with the vegetables, along with milk, butter, and cheese packet. Toss and serve!


Hamburger Mac and Cheese

Yields: 2 servings
Active Time: 15 minutes

Ingredients

1 (6-ounce) box Annie’s Gluten-Free Rice Pasta & Cheddar Macaroni and Cheese
3 tablespoons milk
2 tablespoons butter
1 cheese packet (included in box)
3.5 ounces mini meatballs
1 medium pickle or 3 cornichons, chopped

Instructions

Cook pasta according to package instructions. Drain pasta, then add it back into the saucepan along with milk, butter, cheese packet, and meatballs; gently stir. Top with pickles before serving.
