Ingredients
1 pound ground beef (or use Beyond Beef)
Olive oil
3 cloves garlic, minced
2 cups prepared pasta
1 ½ cups prepared broccoliÂ
2–3 cups spinach
¼ cup freshly grated parmesan, plus more if desired
Chili flakes, to taste
Salt and pepper, to taste
Fresh basil, to garnish
Instructions
Place a large saute pan over medium-high heat. When it’s warm, add a few teaspoons of olive oil. Add the ground beef and cook until browned, stirring occasionally and breaking it up with a wooden spoon. Halfway through cooking, add the garlic, salt, and pepper.
Transfer cooked ground beef to a food storage container. (You’ll be using half of it now.) Allow to cool, then store remaining half in fridge for future use.
In the same saute pan, add the broccoli and saute until warmed through and slightly browned. Add the prepared pasta, spinach, and a few tablespoons of water, stirring to wilt the spinach. When the spinach is almost fully wilted, add half of the cooked ground beef back to the pan, stirring to warm through. Add the parmesan and a pinch of chili flakes, stirring to combine.
Divide pasta between two bowls and serve with freshly grated parmesan and basil.
