  • Sea salt
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 ½ cups fresh or thawed frozen pitted sweet cherries
  • ¼ cup dry red wine
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon brown sugar

How to Make Rib Eye Steak w/ Cherry Sauce

  1. Make the steak: Let steak come to room temperature. Pat dry and generously season with salt and pepper.
  2. Preheat gas or charcoal grill to high heat. Add oil to grill or grill pan. Grill the steak on one side until golden brown and charred in spots, 4 to 6 mins. Flip the steak and grill, rotating, until cooked as desired (4 to 6 mins more for medium rare to medium). Let steak rest 5 to 10 minutes.
  3. Make the sauce: Heat 1 tablespoon olive oil in a large heavy skillet over medium-high heat until it shimmers.
  4. Stir in the onion, pepper, garlic, and ½ teaspoon salt and cook, stirring occasionally, until the peppers are tender, 10 to 12 minutes.
  5. Stir in the tomato paste and cumin and cook, stirring constantly, until softened, about 4 minutes.
  6. Stir in the wine, vinegar, and sugar.
  7. Transfer the mixture to a blender, and blend until smooth.
  8. Return the sauce to the skillet, bring to a simmer over medium heat, and cook until it’s a little looser than ketchup, 2 to 4 minutes. Season with more salt and sugar to taste and serve with the steak.
