Snack on Creamy Pumpkin Hummus For a Fall-Appropriate Appetizer

This savory pumpkin hummus works wonderfully as a seasonal dip, or as the centerpiece of a fresh vegetable lunch bowl.

Pumpkin Hummus

Yield: 8 servings
Active Time:

1 can chickpeas, rinsed and drained
1 can pumpkin puree
2 cloves garlic
2 tablespoons tahini
2 teaspoons ground cumin
1/4 teaspoon ground coriander
1/2 teaspoon chili powder
3/4 teaspoon cinnamon
Juice of 2 lemons
2 teaspoons salt
Freshly ground black pepper
3 tablespoons olive oil

Place all ingredients in the bowl of a food processor and process until smooth. Check for seasoning and store in the fridge, covered, for up to 4 days.
