Founder of Simple Mills, Katlin Smith, grew up in a family who suffered from gluten intolerance—including herself. Throughout high school, Smith suffered from classic symptoms of gluten sensitivity like excruciating joint pain, frequent bouts of anxiety, and constant headaches. One day, the pain that Smith felt became almost unbearable. It was that moment when a close friend gave her some life changing advice—go gluten-free! It had helped Smith’s friend overcome similar health problems and she felt that it was worth trying. She removed anything containing gluten from her diet and almost immediately, Smith felt renewed. While she didn’t realize it yet, this was the first step toward her to-be company, Simple Mills. Simple Mills gets started Unsatisfied with the offerings of gluten-free options at the nearby market, Katlin started making her own snacks and meals at home. As gluten-free became a more widespread diagnoses, she slowly started to see a growing need for wheat free foods. Although some gluten-free options did exist, they weren’t always accessible to common people. The concept for what would become Simple Mills grew in Smith’s head as she got her undergrad in Business Admin at the University of North Carolina. Though, the ideas didn’t become fleshed out until she got her first job in the Atlanta area. Smith decided that she wanted to put out a test product, so she made batches of gluten-free baked goods in a professional kitchen during her free time. In 2012, Katlin quit her job and moved up north to get her MBA at the University of Chicago. Inspired by the entrepreneurial spirit of her professor, she formally launched Simple Mills. Simple Mills was an instant success. At the end of that first year, they had their baking mixes available in 25 different stores, but Smith wanted to expand her reach even more. The rise of Simple Mills To get into grocery stores was one thing, but to stay on the shelves was another. Smith was always striving to perfect the Simple Mills recipe and spent a significant amount of time researching and developing the absolute best ingredients for her baking mixes. She devised formulas that were not only paleo-friendly and gluten-free, but that also contained more protein and less sugar than rivals, all while tasting absolutely delicious. Tell me about the ingredients that Simple Mills uses The name Simple Mills comes from the clean and simple ingredients used for their products that are clearly marked on their labels. Let’s take a look at what’s inside these delectable mixes. Almond flour: Almond flour is miles ahead of regular wheat-based white flour! As the name suggests, almond flour is made from almonds grown in central California that have been stripped of their protective shell and milled down. It has an exceedingly high amount of protein and vitamins, making it a great option to cook and bake with. Cassava: These are a woody shrub that is commonly found in in warmer climates near the equator. Simple Mills gets their cassavas from central Africa. Cassavas are rich in nutrients such as iron and calcium. Flax: Flax may be small in size, but don’t let that fool you—it has an extraordinary amount of health benefits and vitamins, ranging from being a potent antioxidant to promoting healthier skin. Arrowroot: An iconic herb used for millennia throughout Asia to aid digestion. Simple Mills grounds the plant down to a powder to help give their baked goods a fluffy texture. Coconut sugar: Coconut trees grow flowers that are gathered for the nectar they produce. That harvested nectar is cooked until it crystallizes into coconut sugar. Production of coconut sugar uses 20% less resources but makes 75% more sugar, making it a healthier and environmentally friendly option. What are some products that Simple Mills sells?
