Why You’ll Love Shredded Coconut, Unsweetened

Whether it’s used in a pastry or dessert, sprinkled on top of a summer salad, or mixed in with morning granola, Bob's Red Mill Shredded Unsweetened Coconut is one of the most versatile ingredients you can have in your kitchen.

The health benefits of coconut

Though shredded coconut is often associated with bakery-quality cakes, that barely touches the surface of what it can be used for—and just how healthy it really is, especially when using unsulphured flakes like Bob’s Red Mill.

Healthy fats

Yes, coconuts are high in saturated fat, but contrary to years of misinformation, this is actually a good thing. Without fat, humans would cease to exist since some amount is needed for optimal body function. But you have to know which kinds are good and which kinds are bad. Saturated fats come in two varieties: long-chain triglycerides and medium-chain triglycerides. The long-chain type takes much longer to process, so it can remain in the body for longer periods of time and cause the often-associated conditions, including obesity, heart disease, and stroke.

On the contrary, medium-chain triglycerides (like those found in coconuts) are ingested and go straight to the liver, getting transformed quickly into instant fuel for the body. That makes Bob's Red Mill Shredded Unsweetened Coconut an amazing boost for natural energy and also won’t cause the unnecessary sugar highs and crashes like other sweeteners, which is important for diabetics or anyone watching blood sugar. So, start the day off right by incorporating the shreds into breakfast, beat the afternoon slump by topping yogurt with them, and enjoy coconut-flavored desserts without the guilt.

Coconut is high in vitamin A and vitamin E, along with polyphenols, which can work together to lower levels of LDL cholesterol. This type of cholesterol can linger in the blood and skin and is often associated with higher risks of cardiovascular disease and related heart problems.

As an added bonus to heart health, the iron in coconut also promotes natural and healthy red blood cell counts. With plentiful amounts, the heart as well as the rest of your body will operate at its best and heal more properly after any kind of injury.

Fiber is an essential dietary component that promotes digestive health and regularity, and also keeps you feeling fuller for longer. Combined with the natural energy coconut also provides, eating it will naturally increase your metabolic rate, making it easier to burn fat. That’s an important facet for weight management.

Cooking with Bob's Red Mill Shredded Unsweetened Coconut

Shredded coconut can bring an amazingly flaky and chewy texture to anything it’s added to, not to mention a delightfully exotic flavor. Since the taste is not too overpowering, it’s the perfect way to punch up cereals, yogurts, smoothies, sweet desserts, even cocktails. Here are some of Thrive Market’s favorite ways to use shredded coconut.

Toasted Coconut Bars

Why buy granola and cereal bars from the store when you can make your own at home with just a few wholesome ingredients and some flavorful spices? These toasted coconut bars have just enough sweetness to be enjoyed as a dessert but are also hearty enough for an energizing breakfast—and they’re portable to eat on-the-go. The base of this recipe is made from toasted cashews and coconut, which are baked for a few minutes to bring out their natural flavors. Nutmeg, cardamom, Medjool dates, and vanilla are then added to the mix, which is blended in a food processor and then frozen to set. With such a simple ingredient list, these bars are Paleo, vegan, and also gluten-free.

Gluten-Free Millet Bowl

When oatmeal just won’t do the trick (or if you can’t have it because of a gluten intolerance), millet can be a quality substitute. Make a creamy porridge by adding almond and coconut milks, and then mix in cinnamon and cardamom for a bit of spice. But, in this recipe, the toppings are the most memorable part. Try shredded coconut, pistachios, honey, cacao nibs, and goji berries to keep things interesting but still healthy.

Gluten-Free Vegan Strawberry Truffles

Drumroll, please—this is the dessert you’ve been waiting for. Raw chocolate truffles taste just like the real thing but are made with all-natural ingredients including walnuts, dates, strawberries, and cacao powder. No extra sugar needed! Add your choice of toppings for more texture and beautiful presentation: Some ideas include shredded coconut, cinnamon, and chopped nuts.

“Skinny” Coconut Margarita

Margaritas sound refreshing and tasty at any party, but all of the added sugar is sure to give you a headache by the end of the night. Instead, try this alternative recipe that stirs up a new kind of cocktail by using coconut in four ways. Coconut water cuts the intense bite of the tequila, while a splash of coconut milk makes it velvety smooth. To sweeten things up, add in a dash of coconut nectar, and then finish the drink with a coconut-salted rim that uses shreds like Bob’s Red Mill.

Reviews For Shredded Coconut, Unsweetened

Finely Shredded Coconut

I was expecting the coconut slivers, but really like this product. It can be added to anything and will not impart a strong coconut taste. Instead, it will be quite subtle. Not everyone will even know you added it!
As a bonus, you can fill your cookies and baked goods with a bit more fiber and protein. I will purchase again!

Very high quality, organic product, competitive price. Highly recommended.

- Karhie

Must have and best price for a staple in a GF or Paleo diet!

- Theresa

I love my review will automatically give this a 5 star! Packaging is great, taste is great.

- Melissa

Great taste

Wonderful to coat shrimp, or add to muffins. No added sugar, Yeah.

- Kathleen

Love that is sugar free

Nice to find a sugar free version at a good price.

- Greta

Very finely chopped.

We prefer our shredded coconut to be bigger flakes. The flavor was ok, but the flakes were too finely chopped. Price is great though.

Shredded, not flakes

They are finely shredded coconut meat. Not larger flakes or shavings. Delicous.

- Amanda

Makes fantastic deserts and baked goods

I do a lot of paleo baking and a lot of recipes use shredded coconut or coconut flakes. This products works in both cases (I use this even if the recipe calls for flakes and it turns out fine). I have muffin recipes and grasshopper bar recipes that use a lot of shredded coconut so I keep bags of this in stock all the time. You can't beat the price of this one on Thrive. Always a very fresh product (when it arrives), and always very delicious!!!

- Sharon

Great product, great price!

I have never been a fan of shredded coconut, probably because I never tried the unsweetened organic variety. Since I've transitioned from a mainly Paleo diet, I use it far more often, especially in baked goods. And it's fabulous. My entire family loves it in a Pumpkin Paleo Cookie recipe I make on occasion, as well as homemade trail mix.

- Jeannie

Not what I was expecting.

I assumed that when I ordered this, I was going to receive a bag of larger coconut shavings that were slightly moist. However, it was the opposite.

The coconut was shredded pretty finely, which worked well in some cupcakes, but not in larger baked goods or soups. I wanted more texture but this was too dry. My husband kept picking a lot of the pieces out because it was more crunchy than anything and he prefers slightly chewable flakes.

- Candice

My Favorite Baking Topping and Ingredient!

I use this when making cake and bread mixes and as a topping on cupcakes and the like. It is good quality coconut flake and I am most happy that this product is "unsweetened." When you buy sweetened coconut flakes, they are coated in a sugar or a chemical. These flakes have neither!

My only dissatisfaction is that these these flakes can be considered a little dry. They crumbled easy after being put in the oven on top of the bread. Sometimes I put it in my smoothies and it works great- because smoothies are wet!

- Arnold Miles

Delicious and REAL shredded coconut

This shredded coconut does exactly what I need it to do, and the quality is superb. I put it in cereal and oatmeal and while I enjoy the crunch of it when it's dry, it gets to be a soft, pleasantly chewy texture once it absorbs some moisture. It's got a great rich, fresh coconut flavor and it's nice that this is unsweetened so I have more control over the flavor. It keeps really nicely in the freezer, and until finding it here on Thrive Market, I would buy in bulk and freeze whatever I wasn't using. It's actually cheaper here than the bulk rate I was buying it for, and it's more convenient to get a couple at a time here than storing a few in the freezer. I'm really glad I found it here! I've been buying Bob's products for a few years and this brand played a major role in my transition to a healthier lifestyle. They always offer clean, green, high-quality food and this product is no different.

- Doug A.

Great for coconut milk!

This makes the best coconut milk I've had so far! I always make my own coconut milk but I used to use flaked coconut. Now I just throw the Bob's Red Mill Shredded coconut and water into my Vita-mix, mix it up, and then strain it through a milk bag. It's delicious! I enjoy it plain (sometimes I add vanilla extract for sweetness) but I also love it as a dairy free coffee creamer! Great quality product!

- Jeannie B

My children who are now teenagers have insisted most of their lives that they did not like coconut. I made two batches of granola last week and added Bob's Red Mill brand unsweetened coconut to one batch but no coconut to the other. Surprise! The batch of granola they preferred included Bob's Red Mill unsweetened coconut. It was my first time trying this brand and we love it. I can't wait to try it in other recipes.

- Amber Fuller

Different Flavor

These seem to be a good quality, but they have a different flavor than the ones I've been buying locally. I still haven't decided if that's a good thing or a bad thing (leaning toward bad...). I use these to make coconut butter and I feel like these have less of a robust flavor than my store-bought ones. But they're still a good product and a great price.

- Erin

It's so hard to find food that doesn't have added sugar these days, so it's so nice to have an un-sweetened version. Works great in Chicken Curry!

- Robert

Miss the sweet

This is a great shredded coconut for recipes that call for unsweetened coconut. Sweetened coconut has a more pleasant flavor, but of course it's worse for you.

I do bake with this coconut. I really need to work on my sugar addiction....

- Dabney Aceto

Make sure you notice that this is unsweetened coconut. It does taste different. To me, it tastes better. You can do so much with this coconut. And since it's from Bob's Red Mill you know that it's good.

I love baking with this stuff and use it in cakes and cupcakes almost constantly.

- Jeanie W.

Perfectly shredded

I absolutely love this shredded coconut. It's perfectly shredded, not too big and not too small. It tastes great. I prefer unsweetened coconut, it's so much better for you and more versatile.

I like making interesting recipes with this stuff. It's good in pudding and fruit dishes.

- Natalie Kearnie

Too small for me

I mistook this as flakes, really, I thought they were the same thing.

But this shredded coconut is quite small. It works ok for baking, but I prefer the larger flakes so I really get the full taste of the coconuts. The shredded coconut can get lost in my oatmeal and cereal sometimes, so while it's good, I want something larger for my needs.

- Zora

Good healthy coconut

Unlike the coconut that has added sweeteners, this shredded coconut has no sugar.

It's very difficult to find this at any of my local stores, so I'm really happy Thrive not only has it in bulk, but has a great price too. I use it mostly as an additive to my protein smoothies and to garnish my sticky rice recipes. Works great for both uses.

- Zeb S.

Nice aroma

This is a good coconut product. I buy quite a bit of Bob's products, especially their muesli, which is delicious.

The coconut has a great texture and a nice crunch. It stayed fresh for a long time, and is great in my Thai dishes, on oatmeal and in yogurt. It's not sweet, but it gives food that unique coconut flavor and smell that I love.

- Z. Shode

Adds crunch to everything

I didn't think I'd like shredded coconut without sugar, but I was wrong. It adds a crunch and a unique flavor to a lot of food.

Bob's always been committed to natural food, and this is no different. It's great as a unique addition to cookies and cakes, or to sprinkle over yogurt and cereal.

- Zana

Many ways to use

Coconut is one of the healthiest foods you can eat. But it has to be sourced naturally, and can't have added sugar like most of the stuff on the market.

Bob's Red Mill unsweetened coconut flakes are awesome. No sugar, all natural, and perfect for a boost without added calories. I use it on oatmeal, cereal and believe it or not straight out of the bag.

- Zachary Stewart

Fantastic as a Topping

This has been really great. I use coconut as a topping for a lot of things, and I was finding that most coconut I could find had added sweeteners. It tasted great, sure, but I was hoping to find less processed food for my diet. Bob's Red Mill Shredded Coconut has been great for that. It's entirely unsweetened, which took some getting used to, but it's been really perfect as a topping on my ice cream. It adds a bit of crunchy goodness while still being healthy.

It does have to be refrigerated after opening, though, and since the bag doesn't have a sealing system or anything, I've had it tip over and spill a bit when I hadn't closed it properly. I wish it came in different packaging.

- JesseyJ411

I like to bake a lot, and when I bake I often make things that call for coconut. Sometimes I add it even when it isn't called for.

I buy Bob's Red Mill shredded coconut because it is one of the healthiest choices out there. I use it in my banana bread and muffins, I use it in my pineapple upside-down cake and more. It also make a great flavorful addition to homemade frosting when ground up.

- Patience Keegan

Coconut is the key!

The key as in the key ingredient to many of my cakes, cookies and smoothies. I love the difference in consistency that coconut adds to thinks, as well as the flavor.

Bob's Red Mill is one of my favorite brands and their shredded coconut is wonderful. It's moist and flavorful. It adds a great touch to fresh made pina coladas too! My favorite uses are in homemade frosting and in trail mix.

- Von Hix

Good product!

This is a great shredded coconut with no additives. It can be pricey, but it's pretty affordable here!
