Finely Shredded Coconut
I was expecting the coconut slivers, but really like this product. It can be added to anything and will not impart a strong coconut taste. Instead, it will be quite subtle. Not everyone will even know you added it!
As a bonus, you can fill your cookies and baked goods with a bit more fiber and protein. I will purchase again!

Makes fantastic deserts and baked goods
I do a lot of paleo baking and a lot of recipes use shredded coconut or coconut flakes. This products works in both cases (I use this even if the recipe calls for flakes and it turns out fine). I have muffin recipes and grasshopper bar recipes that use a lot of shredded coconut so I keep bags of this in stock all the time. You can't beat the price of this one on Thrive. Always a very fresh product (when it arrives), and always very delicious!!!

I have never been a fan of shredded coconut, probably because I never tried the unsweetened organic variety. Since I've transitioned from a mainly Paleo diet, I use it far more often, especially in baked goods. And it's fabulous. My entire family loves it in a Pumpkin Paleo Cookie recipe I make on occasion, as well as homemade trail mix.
Not what I was expecting.
I assumed that when I ordered this, I was going to receive a bag of larger coconut shavings that were slightly moist. However, it was the opposite.
The coconut was shredded pretty finely, which worked well in some cupcakes, but not in larger baked goods or soups. I wanted more texture but this was too dry. My husband kept picking a lot of the pieces out because it was more crunchy than anything and he prefers slightly chewable flakes.
My Favorite Baking Topping and Ingredient!
I use this when making cake and bread mixes and as a topping on cupcakes and the like. It is good quality coconut flake and I am most happy that this product is "unsweetened." When you buy sweetened coconut flakes, they are coated in a sugar or a chemical. These flakes have neither!
My only dissatisfaction is that these these flakes can be considered a little dry. They crumbled easy after being put in the oven on top of the bread. Sometimes I put it in my smoothies and it works great- because smoothies are wet!

Delicious and REAL shredded coconut
This shredded coconut does exactly what I need it to do, and the quality is superb. I put it in cereal and oatmeal and while I enjoy the crunch of it when it's dry, it gets to be a soft, pleasantly chewy texture once it absorbs some moisture. It's got a great rich, fresh coconut flavor and it's nice that this is unsweetened so I have more control over the flavor. It keeps really nicely in the freezer, and until finding it here on Thrive Market, I would buy in bulk and freeze whatever I wasn't using. It's actually cheaper here than the bulk rate I was buying it for, and it's more convenient to get a couple at a time here than storing a few in the freezer. I'm really glad I found it here! I've been buying Bob's products for a few years and this brand played a major role in my transition to a healthier lifestyle. They always offer clean, green, high-quality food and this product is no different.

Great for coconut milk!
This makes the best coconut milk I've had so far! I always make my own coconut milk but I used to use flaked coconut. Now I just throw the Bob's Red Mill Shredded coconut and water into my Vita-mix, mix it up, and then strain it through a milk bag. It's delicious! I enjoy it plain (sometimes I add vanilla extract for sweetness) but I also love it as a dairy free coffee creamer! Great quality product!

Bob's Red Mill SHREDDED COCONUT- UNSWEETENED
My children who are now teenagers have insisted most of their lives that they did not like coconut. I made two batches of granola last week and added Bob's Red Mill brand unsweetened coconut to one batch but no coconut to the other. Surprise! The batch of granola they preferred included Bob's Red Mill unsweetened coconut. It was my first time trying this brand and we love it. I can't wait to try it in other recipes.

These seem to be a good quality, but they have a different flavor than the ones I've been buying locally. I still haven't decided if that's a good thing or a bad thing (leaning toward bad...). I use these to make coconut butter and I feel like these have less of a robust flavor than my store-bought ones. But they're still a good product and a great price.

Miss the sweet
This is a great shredded coconut for recipes that call for unsweetened coconut. Sweetened coconut has a more pleasant flavor, but of course it's worse for you.
I do bake with this coconut. I really need to work on my sugar addiction....

Make sure you notice that this is unsweetened coconut. It does taste different. To me, it tastes better. You can do so much with this coconut. And since it's from Bob's Red Mill you know that it's good.
I love baking with this stuff and use it in cakes and cupcakes almost constantly.

Too small for me
I mistook this as flakes, really, I thought they were the same thing.
But this shredded coconut is quite small. It works ok for baking, but I prefer the larger flakes so I really get the full taste of the coconuts. The shredded coconut can get lost in my oatmeal and cereal sometimes, so while it's good, I want something larger for my needs.
Good healthy coconut
Unlike the coconut that has added sweeteners, this shredded coconut has no sugar.
It's very difficult to find this at any of my local stores, so I'm really happy Thrive not only has it in bulk, but has a great price too. I use it mostly as an additive to my protein smoothies and to garnish my sticky rice recipes. Works great for both uses.

This is a good coconut product. I buy quite a bit of Bob's products, especially their muesli, which is delicious.
The coconut has a great texture and a nice crunch. It stayed fresh for a long time, and is great in my Thai dishes, on oatmeal and in yogurt. It's not sweet, but it gives food that unique coconut flavor and smell that I love.

Fantastic as a Topping
This has been really great. I use coconut as a topping for a lot of things, and I was finding that most coconut I could find had added sweeteners. It tasted great, sure, but I was hoping to find less processed food for my diet. Bob's Red Mill Shredded Coconut has been great for that. It's entirely unsweetened, which took some getting used to, but it's been really perfect as a topping on my ice cream. It adds a bit of crunchy goodness while still being healthy.
It does have to be refrigerated after opening, though, and since the bag doesn't have a sealing system or anything, I've had it tip over and spill a bit when I hadn't closed it properly. I wish it came in different packaging.
I like to bake a lot, and when I bake I often make things that call for coconut. Sometimes I add it even when it isn't called for.
I buy Bob's Red Mill shredded coconut because it is one of the healthiest choices out there. I use it in my banana bread and muffins, I use it in my pineapple upside-down cake and more. It also make a great flavorful addition to homemade frosting when ground up.

Coconut is the key!
The key as in the key ingredient to many of my cakes, cookies and smoothies. I love the difference in consistency that coconut adds to thinks, as well as the flavor.
