Is the air fryer your new BFF yet? It might be after you try this recipe. On today’s episode of Prep School, Megan Mitchell shows us how it’s done and cooks up perfectly crisp and golden French fries flavored with rich duck fat. Here’s a tip: the recipe comes together in two batches, so keep the first tray warm in a low oven while you finish the rest.

5 medium Yukon gold potatoes, scrubbed and peeled
2 tablespoons duck fat, melted, divided
Flaky sea salt
Minced parsley, for garnish
Cut potatoes lengthwise into ¼-inch thick matchsticks. Add to a large bowl and cover with cold water; let sit 30 minutes. Drain potatoes and pat dry. Place half the potatoes in a shallow bowl and toss with 1 tablespoon duck fat; liberally sprinkle with flaky salt.
Set air fryer to 370°F. Place potatoes in basket in a flat, even layer and fry 10 minutes. Flip potatoes and fry 8 to 10 minutes more, or until golden and crisp. Repeat process with remaining potatoes. Serve immediately with parsley sprinkled on top.
