It's not just for sandwiches. Whole-grain mustard pairs beautifully with fresh herbs in this quick, tangy marinade for crispy chicken thighs. The dish is ideal for a weeknight dinner that's as easy as it is satisfying. 

Mustard-Herb Chicken

Yield: 8 servings
Active Time:


1 cup parsley leaves, chopped
1 tablespoon thyme leaves, chopped
2 teaspoons whole grain mustard
2 cloves garlic, minced
2 tablespoons apple cider vinegar
1/2 cup olive oil
Generous pinch sea salt
Freshly ground pepper
8 bone-in, skin-on Thrive Market Chicken Thighs


Stir together parsley, thyme, mustard, garlic, vinegar, oil, salt, and pepper. Add chicken and toss to coat. Set aside to marinade for 15 minutes.

Heat a large skillet over medium heat. Working in batches if needed, place chicken skin-side down to brown and cook for about 8 minutes. Once skin is golden and crispy, turn over to finish cooking for another 6 to 8 minutes, or until cooked through.
