Mustard-Herb Chicken Recipe

It’s not just for sandwiches. Whole-grain mustard pairs beautifully with fresh herbs in this quick, tangy marinade for crispy chicken thighs. The dish is ideal for a weeknight dinner that’s as easy as it is satisfying. 

Mustard-Herb Chicken

Yield: 8 servings

Ingredients

1 cup parsley leaves, chopped
1 tablespoon thyme leaves, chopped
2 teaspoons whole grain mustard
2 cloves garlic, minced
2 tablespoons apple cider vinegar
1/2 cup olive oil
Generous pinch sea salt
Freshly ground pepper

Instructions

Stir together parsley, thyme, mustard, garlic, vinegar, oil, salt, and pepper. Add chicken and toss to coat. Set aside to marinade for 15 minutes.

Heat a large skillet over medium heat. Working in batches if needed, place chicken skin-side down to brown and cook for about 8 minutes. Once skin is golden and crispy, turn over to finish cooking for another 6 to 8 minutes, or until cooked through.
