Instead, show off heirlooms in a simple salad of fresh herbs, shallot, full-bodied olive oil, and flaky sea salt. It tastes gourmet, yet requires no cooking—what could be better?

Active Time: 5 minutes
3 heirloom tomatoes, sliced into rounds
1/2 cup chopped mixed herbs (mint, cilantro, chives)
1 large shallot, thinly sliced
Large pinch large-flake sea salt
Freshly ground pepper, to taste
1 to 2 tablespoons olive oil
Toss tomatoes with herbs and shallot. Arrange on a platter and season with salt and freshly ground pepper. Drizzle with olive oil and serve.
