Tomato Olive Oil Salad Recipe

At their peak of ripeness, summer’s heirloom tomatoes explode with sweet, robust flavor—which you don’t want to overpower with creamy dressing. Instead, show off heirlooms in a simple salad of fresh herbs, shallot, full-bodied olive oil, and flaky sea salt. It tastes gourmet, yet requires no cooking—what could be better?

Tomato Olive Oil Salad

Yield: 2 to 4 servings
Active Time: 5 minutes

Ingredients

3 heirloom tomatoes, sliced into rounds
1/2 cup chopped mixed herbs (mint, cilantro, chives)
1 large shallot, thinly sliced
Large pinch large-flake sea salt
Freshly ground pepper, to taste
1 to 2 tablespoons olive oil

Instructions

Toss tomatoes with herbs and shallot. Arrange on a platter and season with salt and freshly ground pepper. Drizzle with olive oil and serve.
