Bright and refreshing, a savory watermelon salad is perfection on swampy summer nights. A touch of mint and a hint of Mexican-inspired spice is the perfect foil for sweet sun-ripened watermelon and tomatoes straight from the farmers market.
Yield: 2 to 4 servings

2 cups watermelon, cut into 1-inch cubes
2 cups beefsteak tomatoes, cut into 1-inch cubes
1 cup mint leaves
Juice of 3 limes
1 tablespoon coconut sugar
½ teaspoon cayenne pepper
½ teaspoon chilli pepper
½ teaspoon ground cumin
1 teaspoon ground ginger
1 teaspoon Maldon salt
Place watermelon, tomatoes, and mint in a large bowl.
In a small bowl, whisk together lime juice, coconut sugar, cayenne pepper, chilli powder, cumin, ginger, and salt. Pour over watermelon-tomato mixture and toss to mix. Cover and place in fridge 30 minutes to let flavors infuse. Serve chilled.
