Why You’ll Love Organic Shredded Coconut

Going crazy for coconuts is okay when you have a quality product like Woodstock Organic Shredded Coconut. Made with only one pure ingredient, it far surpasses other dried fruits that are often laden with sugar and additives.

So, go on and add exotic coconut flavor to all of your favorites—pastries and desserts, fresh salads, spice-filled granolas, an energizing trail mix, creamy yogurts, or even crushed in with delicious beverages and smoothies. With so many healthy fats, vitamins, and minerals, doing so can actually be good for you.

The nutrition of coconut

Though shredded coconut is often an added layer on cakes and cupcakes, it’s not just a guilty pleasure. In fact, coconut is a nutritious ingredient with a number of health benefits. Each 7 oz. bag of Woodstock Organic Shredded Coconut has dietary fiber, protein, iron, and an incredible amount of the good kind of saturated fats that promote heart health. Here’s a look at what’s inside.

Healthy saturated fats that provide fuel

For years, everyone associated saturated fats with less than optimal health, but that image is changing with further research and evidence that they actually contribute to well-being. The human body actually needs fat in order to run efficiently and promote a healthy heart, but there are good kinds and bad kinds.

More specifically, saturated fats can be broken down into two categories—long-chain triglycerides and medium-chain triglycerides. Long-chain types enter the body and take an incredibly long time to be absorbed and processed. When taken in excess, they linger for too long, and then get stored in the body, resulting in weight gain and increased risks for heart disease and stroke.

This is contrary to how medium-chain triglycerides operate; instead, MCTs are ingested and almost immediately transmitted to the liver where they are transformed into fuel. When eating a handful of Woodstock Organic Shredded Coconut, you can experience a boost in your energy level, but not because of added sugars or caffeine. That means adding it to your favorite foods can be the ideal way to start off your day or power through an exhausting afternoon that has you falling asleep at your computer.

Additionally, medium-chain triglycerides won’t cause sugar highs or sugar crashes when consumed. Since they get transformed into energy almost immediately, there’s no need to worry about a rapid increase in blood sugar levels.

Vitamins that lower cholesterol

LDL cholesterol is the bad type of cholesterol that needs to be reduced when it gets too highly concentrated in the blood. If not taken care of, this type lingers in the body and puts people at risk for cardiovascular disease and other related heart problems. Luckily, coconut contains high amounts of vitamin A and vitamin E, along with polyphenols, that work together to lower LDL cholesterol and protect the heart.

These compounds inside coconut also help to promote natural and healthy red blood cell formation. When you have good amounts of red blood cells, you heart (and the rest of your body) operates better and feels less sluggish.

Fiber that promotes weight management

Not only do the good fats in coconut transform into fuel, but the added fiber also works to keep you feeling full. When this happens, your metabolic rate increases, so as you run errands, work out, or even go for a quick walk around the neighborhood, you’ll be able to burn fat even quicker. Coconut is also known to promote a healthy thyroid, which is important for weight management, too.

Cooking with Woodstock Organic Shredded Coconut

Shredded coconut brings amazing flaky and chewy texture to anything you add it to, not to mention delightfully exotic flavor and just a hint of sweetness. Since it’s not too overpowering and good for you, you can add it freely to cereals, yogurts, smoothies, cocktails (yes, really), and of course some wonderful, sweet desserts. Here are some of Thrive Market’s favorite ideas.

Toasted Coconut Bars

Why buy granola and cereal bars from the store when you can make your own at home with just a few wholesome ingredients and some flavorful spices? These toasted coconut bars have just enough sweetness to be enjoyed as a dessert but are also hearty enough for an energizing breakfast—and they’re portable to eat on-the-go. The base of this recipe is made from toasted cashews and coconut, which are baked for a few minutes to bring out their natural flavors. Nutmeg, cardamom, Medjool dates, and vanilla are then added to the mix, which is blended in a food processor and then frozen to set. With such a simple ingredient list, these bars are Paleo, vegan, and also gluten-free.

Gluten-Free Millet Bowl

When oatmeal just won’t do the trick (or if you can’t have it because of a gluten intolerance), millet can be a quality substitute. Make a creamy porridge by adding almond and coconut milks, and then mix in cinnamon and cardamom for a bit of spice. But, in this recipe, the toppings are the most memorable part. Try shredded coconut, pistachios, honey, cacao nibs, and goji berries to keep things interesting but still healthy.

Watercress-Grapefruit Salad

Light, bright, and refreshing, this salad recipe pairs tart grapefruit, peppery watercress, and fresh herbs into one tasty combination. And don’t be surprised if you feel invigorated after eating it—watercress is rich in antioxidants and protects the body from free radical damage. Make this salad even more impressive by sprinkling some Woodstock Organic Shredded Coconut on top for full flavor and added texture.

“Skinny” Coconut Margarita

Margaritas sound refreshing and tasty at any party, but all of the added sugar is sure to give you a headache by the end of the night. Instead, try this alternative recipe that stirs up a new kind of cocktail by using coconut in four ways. Coconut water cuts the intense bite of the tequila, while a splash of coconut milk makes it velvety smooth. To sweeten things up, add in a dash of coconut nectar, and then finish the drink with a coconut-salted rim that uses shreds like those from Woodstock.

Very Tasty

I sprinkle them on fresh banana slices for a late night dessert. Some people did not like the small pieces of coconut, wanted larger, but it works well for me.

Great product

I don't know that this price is much different than what my local store sells it for, but regardless I like this product. The flavor is not that strong in my opinion. I mostly use this to make peanut butter balls and I can't really taste the coconut at all but it's probably overpowered by the other flavors. I also use this as a topping on smoothie bowls. It's a great way to eat healthy fats.

- Elizabeth

Really Coconut-ty

I bought this when I finished another brand of organic shredded coconut purchased elsewhere, and this brand tastes so much more like fresh coconut. Mixes well in smoothies, too.

- Linda

Very finely cut and faint flavor, if that's what you want

Awesome and exactly as labeled, but compared to other brands of organic shredded coconut, this one just doesn't fair as well. Very faint coconut flavor and extremely fine cut (more like tiny sprinkles). You need to use more to get the same result. (I use for making homemade paleo chocolate).

Awesome organic shredded coconut!

Just made some coconut milk with this and it tastes awesome! Definitely a staple in my cupboard from now on, and I'll never run out of coconut milk again!

- Vikki

Buy it!

Best tasting shredded coconut we've ever used and we've tried many. However, haven't yet had the pleasure of tasting Thrive's so can't compare it to that.

- Lisa

very happy with this coconut

The shred size is good and this is fresh and flavorful. I used this in a chicken recipe and it was delicious.

- Karyn

Very good naturally sweet and organic !

Amazing!

Great product. Can be used in so many different ways. With the added bonus of no nasty GMO's.

Organic Shredded Coconut

Use this in granola and hope that Thrive adds shaved coconut to their inventory - grest taste, not sweetened (yay!) and great price!

Not dry like I was expecting.

My girlfriend always uses coconut shreds to add to her baked goods. I have never been much of a fan, however. I find them to be so dry where I have to keep chewing before I can swallow the pieces.

She assured me these would be different. And she was right. They have been the best by far. Not at all dry as I was expecting, these actually made the right addition to her cupcakes. I do wish they were a little bit sweeter, but I can settle for the great texture for now. So good, I have started using them in my smoothies!

Great for Breakfast and Dessert

I bought this coconut because it is Organic and Non-GMO! I use it on my breakfast oatmeal for an added punch and on top of my ice cream to add a little crunch. I love coconut so very much!

What I would have liked was a little more flavor. Some coconut flakes are a little more chewy because they are coated. These flakes are not coated which is healthier- I'm just picky. I wish Woodstock made a chewy vs. crunchy option.

- Lisa Carter

Great stuff!

I've always been a coconut fan and this organic shredded is awesome. It's so much better than the sweet store bought products I'm used to having and it's better for you.

I like to have it as a healthy dessert as it's really good on fruits, in yogurt, and with a lot of other sweet but healthy treats.

Best Shredded Coconut

This shredded coconut is the best I've ever tried. Just crunchy enough without being dry, nice fresh taste, great on cereal or sprinkled on a smoothie for some extra crunch!

- Holly

This is so delicious and sweet with a great texture. If you like coconut and want a genuine flavor this is for you.
