Sprouted beans, seeds, and nuts are often touted in the wellness world as being more nutritionally dense than unsprouted foods. It’s believed that the sprouting process (essentially just soaking raw ingredients in water to mimic the process found in nature) unlocks vital nutrients and activates enzymes that may increase digestion. A recent review noted that in sprouted grains, “almost all nutrients are fully available and various antioxidants occur at higher concentrations, thus providing the base to define sprouts as “functional foods,” and a 2012 study in the Journal of the Science of Food and Agriculture found that wheat sprouts had higher levels of fiber, amino acids, and antioxidants after 48 hours of sprouting when compared to unsprouted wheat.

The History of Living Intentions

Between the years of 1998 and 2003, Joshua McHugh was disheartened every time he went to the grocery store. The nutritionally dense foods he was hoping to find—particularly sprouted ingredients—weren’t readily available, which sent him into the kitchen to experiment with his own recipes. Living Intentions officially started out of McHugh’s studio apartment, where he hooked five dehydrators and made all the original products in his home kitchen, which included hand-sticking labels onto cellophane bags. Soon after, the small team found a commercial kitchen space in San Francisco to grow into.

The extra steps take a bit longer, but the brand believes it’s worth it, especially because it makes the ingredients more bioavailable, which may make them easier to absorb. Living Intentions also works with transitional farms, which are undergoing the process of becoming fully USDA Organic Certified. (And yes, everything is still non-GMO!) During a transitional period, which can last up to several years, a farm can’t label its produce as organic even though pesticides aren’t used. Unfortunately, this can make products difficult to sell in the meantime, which is why Living Intentions is partnering with select farms to help them through the changeover.
