Before starting Cappello’s, co-founders Ben Frohlichstein and Stacey Marcellus both left their jobs to work on organic farms. (Ben headed to Boulder, Colorado, and Stacey went to Argentina.) Cooking from ingredients they grew by hand bonded them to nature in new ways, and they were invigorated to share their newfound love of food with the world after reuniting in Colorado. With the mighty almond as their hero ingredient (known for delivering protein, healthy fats, and fiber), they started by reinventing fettuccine so it could be enjoyed by everyone. After perfecting pasta, Cappello’s branched out into cookies, pizza, and gnocchi.
