Walk around any city, and you’re bound to get a whiff of a certain sizzling street food that makes the masses go crazy. But it’s not for the faint of heart; bacon-wrapped hot dogs, also known as danger dogs, can be pretty gnarly!
From dates to donuts, it feels like we’re wrapping everything in bacon these days. But we’ll skip the hot dogs, thanks. Mary the Paleo Chef has something even better up her sleeve.
Start with the undeniable juiciness of chicken thighs, throw in Bartlett pears, brie (leave this out if you’re following the Paleo diet), and a few spices—then wrap that baby in bacon. Perfection!

Boneless chicken thighs, butterflied
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon salt
Bartlett pears, thinly sliced
Brie cheese, thinly sliced (optional)
Bacon
Place butterflied chicken thighs onto a baking pan lined with parchment paper and sprinkle spices on top. Place 1 slice of brie (or any cheese you like) and 1 to 2 slices of pear atop each chicken thigh. Fold chicken thigh to close it, then wrap it in bacon, tucking the end of the bacon into itself to seal. Sprinkle more spice blend over the top. Bake in oven at 350 degrees for 25 minutes. At the last 3 to 4 minutes, bring the oven temperature to broil.
The result: the most sumptuous, bacon-y morsels of chicken.
