Coffee Chia Pudding Recipe

Here’s a make-ahead way to get your morning or afternoon caffeine kick! This luscious pudding starts with a base of freshly brewed coffee, rich macadamia milk, and creamy coconut milk. It thickens up thanks to the magic of chia seeds (which expand in liquid) and is sweetened with honey and a touch of cacao. Every bite will help perk you right up.

Coffee Chia Pudding

Yield: 4 servings
Active Time: 5 minutes
Total Time: 4 hours and 5 minutes


For the pudding
2 cups brewed Kicking Horse Coffee
1 cup Milkadamia Unsweetened Macadamia Milk
½ cup coconut milk
1 cup chia seeds
¼ cup honey
2 tablespoons cacao powder

For the topping

Coconut chips
Cacao nibs


Whisk coffee, macadamia milk, and coconut milk in a large bowl. Add chia seeds, honey, and cacao powder; whisk for 1 to 2 minutes, until smooth (this helps prevent the chia seeds from clumping). Divide between four small bowls; cover and refrigerate for 2 to 3 hours, or until firm. Before serving, sprinkle with coconut flakes and cacao nibs.
