Minty Coconut Shake Recipe

At Thrive HQ, we love the idea of eating green foods on St. Patrick’s Day, as long as food dyes aren’t involved. There are plenty of naturally green—and nutritious!—options available, and our dairy-free mint-coconut shake is a perfect example. Fresh spinach, avocado, and mint give this creamy frozen drink its verdant hue—and the refreshing flavor seems just right for welcoming spring.

Minty Coconut Shake Recipe

Yield: 1 serving
Active Time: 5 minutes

Ingredients

½ cup unsweetened almond milk
½ can coconut milk
1 cup packed baby spinach
5 to 7 mint leaves, stems removed
½ avocado
1½ tablespoons honey
1 teaspoon vanilla extract
1 teaspoon peppermint flavor or extract
2 teaspoons coconut oil
1 cup ice, crushed
1 teaspoon cacao nibs

Instructions

Place all ingredients except ice in blender; blend until smooth. Add ice and blend again until incorporated.Sprinkle cacao nibs on top.
