Before diet soda, frappuccinos, or kombucha, there was switchel. The fizzy, tangy drink—traditionally made with apple cider vinegar, sweetener, and water—has been quenching thirst for decades; some say it dates back to all the way to colonial days. We like livening ours up with orange juice, thyme, and a little sparkling water. Try sipping it as a nonalchoholic digestif or to settle an upset stomach.

Active Time: 5 minutes
1 tablespoon apple cider vinegar
2 to 3 teaspoons maple syrup
1/4 cup orange juice
3 sprigs thyme
1/2 cup sparkling water
Combine vinegar, maple syrup, orange juice, and thyme in a large glass filled with ice and stir to combine. Fill glass with the sparkling water and serve.
