Paleo Breakfast Sausage Recipe

On paper, aromatic fennel seeds and sweet maple syrup don't seem like they'd go together, but breakfast sausage just wouldn't be the same without these key ingredients. Make your own with nothing but good-quality pork, lots of spices, and, for frying, good-for-you coconut oil. 

Paleo Breakfast Sausage

Yield: 4 to 6 servings
Active Time:


2 cloves garlic, minced
1 teaspoon sage leaves, minced
1 teaspoon fennel seeds
1/4 teaspoon cayenne pepper
1 teaspoon paprika
Zest of 1/2 lemon
1 tablespoon maple syrup
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1 pound ground pork
Coconut oil, for frying


Stir together garlic, sage, fennel seeds, cayenne, paprika, lemon zest, maple syrup, salt, and ground pepper in a large bowl. Add ground pork and combine well, taking care not to overmix. Form into small round patties or cylindrical sausage links, roughly a finger’s length, with your hands.

Heat a tablespoon of coconut oil in skillet over medium-high heat. When skillet is hot, working in batches, brown sausages, then turn down heat to medium-low to cook through, roughly 4 minutes each side. Serve hot.

Here's the Real Difference Between Factory-Farmed and Grass-Fed Meat

    I've made this twice now, and it's absolutely delicious! Such a nice break from eggs and apples for breakfast. Almond butter is pretty expensive, though. So I'm curious if, for those not allergic to peanuts, substituting peanut butter (Adam's or comparable) would work. I'm fairly new to low carb/grain free. So I'm looking for answers in 3 categories: low carb effects; whether the bread will still bake; whether it will still taste as amazing. I'll try it next time I make the bread, but if anyone has already done it, I'd love to hear how it turned out.
    These are the modifications that I made:
    * Replaced honey with xylitol - 1:1 replacement, but added a little liquid
    * Replaced vanilla powder with liquid vanilla - upped quantity to 1 TB to replace the honey liquid
    * Omitted stevia - delicious without it.
    * Replaced 1 TB cinnamon with ginger, nutmeg and clove - turns out kind of gingerbread
    My oven is slow, so it takes me 45 min at 320 F to bake.
