Katherine Prendergast is Thrive Market’s super talented Senior Design Director, and it’s no exaggeration when we say this girl is a machine. KP (as we call her at the office) can do pretty much anything—except eat gluten.

That’s because she has Celiac disease, a chronic and genetic autoimmune digestive disorder.  And KP is certainly not alone: Celiac disease is one of the most common autoimmune conditions around, affecting about 1 in 133 people.

The symptoms can vary, but typically diarrhea, bloating, and abdominal pain are involved. Sufferers of Celiac may also experience weight loss, malnutrition, liver dysfunction, and fatigue because their small intestine is unable to absorb nutrients.
