Pitaya Smoothie Bowl Recipe

If there was an award for the best-dressed recipe, this pitaya (aka dragon fruit) smoothie bowl would be a serious contender. The creamy base gets its gorgeous purple hue from pitaya and grapes while crunchy toppings like pumpkin seeds and bee pollen add an extra pop of color and texture. Just grab a spoon to enjoy this beautiful breakfast, any day of the week!

Pitaya Smoothie Bowl

Yield: 1 serving
Active Time: 5 minutes

Ingredients

For the smoothie
1 cup pitaya (aka dragon fruit), peeled and cubed
1 cup Califia Farms Barista Blend Almondmilk
2 ½ tablespoons Primal Kitchen Collagen Fuel, Vanilla Coconut
1 banana, frozen
½ cup grapes, frozen

For the toppings
1 tablespoon pumpkin seeds
1 tablespoon coconut chips
1 teaspoon bee pollen
1 teaspoon chia seeds
Frozen blueberries

Instructions

Add all smoothie ingredients to a blender. Blend on high for 30 seconds, or until smooth; pour into shallow bowl. Sprinkle with toppings and enjoy immediately.
