Farmers Market Find: An Icy, Tangy Passion Fruit Treat

This week, we’re celebrating the seasonal sweetness of passion fruit and mango in this ice cold treat.

Celebrate the last true weekend of summer with this Mexican-style snow cone flavored with a tangy and refined-sugar-free passion fruit syrup. Pieces of mango add flavor and texture to the fruity punch. 

Passion Fruit Raspados

Yield: 6 servings
Active Time: 8 minutes
Total Time: 25 minutes

1 cup raw honey
8 passion fruits
Juice of 2 limes
1/4 teaspoon ginger powder
1 mango, cut into small chunks
Shaved ice

Place honey  and 1 cup of water in a small saucepan. Heat over medium heat until water and honey are well combined, but do not boil. Turn off heat and scoop passion fruit pulp into mixture. Stir in lime juice and ginger powder. Let cool completely.

To serve, layer shaved ice and mango chunks in glasses, then drizzle with passion fruit syrup.
