Banana-Chocolate Chia Pudding Parfaits Recipe

The word “parfait” comes from the French for “perfect”—and it’s easy to see why. Layered desserts like our banana-chocolate chia pudding cups are as fun to eat as they are stunning to look at. If you’re a fan of banana cream pie and rich dark chocolate, you’ll want to serve these over and over. 

Banana-Chocolate Chia Pudding Parfaits

Yield: 2 to 4 servings
Active Time: 10 minutes

Ingredients

For the vanilla chia pudding
1 cup unsweetened non-dairy milk of choice (coconut, almond, hemp)
1/4 cup chia seeds
2 tablespoons raw honey
1 teaspoon vanilla extract

For the chocolate chia mousse
1 cup unsweetened non-dairy milk of choice (coconut, almond, hemp)
3 tablespoons chia seeds
2 1/2 tablespoons cacao powder
4 Medjool dates, pitted
1 teaspoon vanilla extract
Small pinch sea salt

For the toppings
2 ripe bananas
Cacao nibs, to garnish
Shredded coconut, to garnish

Instructions

Make the vanilla chia pudding
In a small bowl, stir together all vanilla chia pudding ingredients. Once honey feels fully incorporated, let sit 5 to 10 minutes.

Make the chocolate chia mousse
Place all chocolate chia mousse ingredients in a blender and blend on high until the mixture is thick and creamy.

Prepare the bananas
Mash bananas in a small bowl with a fork.

Assemble the parfaits
Layer chocolate mousse, mashed bananas, and vanilla chia pudding, dividing the mixtures between 2 to 4 tall glasses. Top each parfait with cacao nibs and coconut flakes. Refrigerate until ready to serve.
